Appalachia Fungorum (formerly Salamander Springs Gardens) is a small, family-run farm in the mountains of North Carolina. They offer a variety of sustainably-grown produce and specialize in fresh shiitake mushrooms. Mushrooms are grown on hardwood logs that are inoculated with mycelium, the foundational mass of branching fibers of the mushrooms. After cutting fresh logs and inoculating, they wait for about a year for the logs to begin producing mushrooms. Although mushrooms are seasonal, they use a few tricks to extend the growing season. Recently, they’ve started to branch out into other types of mushrooms and now offer a mushroom CSA.
“I guess in some ways I was led to farming because I feel like being an activist is not very sustainable. You know, going around telling people, “Well, you need to live better. Eat local.” and that sort of thing. I feel like this is one of the more environmentally friendly occupations that you can have.
